How to boil a Chicken
When to add salt?

If you are not planning to use the stock for sauces, or for additional cooking, then add salt as soon as it starts boiling and you remove the foam.  If you are boiling stock for further cooking, then do not add salt at all, or use in very small quantity, so that you can correct the amount in the future.
